More information about Peach intoxication In one liter of SissiS Peach Rush, our master distillers have captured the aroma of 11 kilos of 100% sun-ripened peaches using a particularly gentle distillation process – more peach is not possible. The distillate can be enjoyed pure, but is also an excellent base for many exciting summer drinks.- Pure fruit distillate made from 100% fully ripe peaches with no artificial additives- particularly mild due to multi-stage ripening process- Intensely fruity thanks to a gentle distillation process- can be enjoyed neat and as a long drink#MASHING PROCESSPure, fully ripe peaches are carefully freed from pits, skin and stalks and processed into a pure fruit puree. The fruit mash ferments with the addition of water and a special flavor-neutral yeast culture. During this process, the fruit sugar is converted into alcohol by the yeast.#DESTILLATIONThe alcoholic mash is distilled under vacuum. In this complex process, the vacuum in the still lowers the boiling point of the mash and distillation can take place at temperatures of around 40 degrees Celsius. Less heat means that the fruit aroma is preserved as well as possible.#REFINEMENTThe peach brandy obtained is refined in a multi-stage process. The first step is pre-storage in steel tanks, after which the distillate is placed in large clay pots. The clay breathes, some of the alcohol rises as angelshare and the aroma condenses in the remaining distillate. The spirit is then blended with a peach spirit. This makes SissiS Pfirsichrausch particularly suitable for mixing with carbonated fillers such as tonic or prosecco. The result is a deep, fruity aroma and a mild finish without the afterburn on the palate that is otherwise typical of a brandy. Blending with a spirit is not traditionally intended in the production of a brandy and SissiS Pfirsichrausch therefore bears the legal product designation of fruit spirit.
